1 Bunch fresh asparagus
Preheat oven to 425 degrees. Clean asparagus and snap off ends. Toss asparagus with olive oil to coat and season with salt and pepper. Arrange in a single layer in a roasting pan. Roast asparagus, turning once, half-way through cooking time, until tender and slightly browned, about 20 to 30 minutes. Roasting is an amazing way to cook most vegetables - this recipe is really more of a method, and can be adapted to almost any fresh farmers’ market find!
